She brings her amazing teaching talents to a menu designed to create delicious meals from Colorado’s native game: Country Rabbit Sausage; Bison Carpaccio with Sherry Shallot Vinaigrette, Squash Brunoise and Sourdough Toasts; Pan-Seared Quail in Agave Herb Marinade; Coffee-Crusted Elk Tenderloin with Ancho Red Chile Sauce; and Grant Farms Duck Ragout with Spaetzle.
